Mixed Vegetables

We've had plenty of heavy meals — now let's turn to something healthier. Here is how to make a mixed vegetable stir-fry.

Mixed Vegetables

Ingredients

  • Broccoli (1 head)
  • Carrot (2)
  • Potato (1)
  • Green peas (1 cup)
  • Zucchini (1 medium)
  • Green papaya (1/2 cup)
  • Onion (1 large)
  • Green chilies (2–3)
  • Turmeric powder (1 teaspoon)
  • Chili powder (1 teaspoon)
  • Salt (to taste)
  • Eggs (2)
  • Oil (2 tablespoons)

Method

  1. First, wash all the vegetables and dice them into small cubes. I used what I had in the fridge — feel free to use whatever vegetables you have on hand. Drain off excess water from the vegetables. Heat 2 tablespoons of oil in a pan and add diced onion. When the onion turns lightly golden, add turmeric and chili powder and stir. Add all the vegetables, stir well, pour in about 1 cup of water, and cover. The vegetables will cook through and the liquid will evaporate within a few minutes. Season with salt to taste. Before taking off the heat, break in the eggs and mix well, then add the green chilies. Stir for about three minutes, then remove from the heat.
  2. Nearly every item in this dish is optional — leave out what you like. That said, eggs make the stir-fry taste exceptional, so I would not skip them.
