Ingredients
- Cabbage (2 cups)
- Carrot (1)
- Gram flour (besan) (1 cup)
- Rice flour (1 tablespoon)
- Egg (1)
- Green chilies (to taste)
- Salt (to taste)
- Cilantro (to taste)
- Turmeric powder (1 teaspoon)
- Red chili powder (1 teaspoon)
Method
- Finely shred the cabbage and toss it with 1 teaspoon salt. Let it sit for 30 minutes so the cabbage releases water. Squeeze out the moisture and transfer the cabbage to a fresh bowl. Finely chop a small carrot. Chop the green chilies and cilantro. Mix everything together with the egg and remaining spices.
- This recipe uses 1 tablespoon rice flour, which makes the pakoras extra crisp after frying. Add a little water if needed to bring the mixture together. Shape into small pakoras and deep-fry over medium heat until golden brown. Drain on paper towels so excess oil is absorbed. Serve hot.
