Split Pea Halwa
On Shab-e-Barat, delicious split pea halwa is made in homes everywhere. You can make this wonderful dish any time you like. Here is the recipe.

Ingredients
- Split peas (2 cups)
- Ghee (1 cup)
- Milk (4 cups)
- Sugar (2 cups)
- Cardamom (4–5)
- Cinnamon (2 sticks)
- Bay leaf (2)
- Salt (1 pinch)
- Chopped nuts (for serving)
- Raisins (for serving)
Method
- First, wash the split peas and soak them in water for 6–8 hours. Then in a pot, cook 2 cups of peas with 4 cups of milk along with the cardamom, cinnamon, and bay leaf until tender. When the peas are cooked and the milk is nearly absorbed, mash or blend them into a paste.
- In a large pot, heat 1 cup of ghee and fry the pea paste over medium heat. Stir constantly so it does not stick to the bottom. This step can take 20–30 minutes; keep stirring the whole time. When the paste is fried to a nut-brown color, there will be no raw smell left. At this stage, add 2 cups of sugar and mix well. Cook for another 2–3 minutes. The split pea halwa is ready.
- While the halwa is still hot, spread it on a tray and cut it into pretty shapes with a knife, cookie cutter, or mold. Serve topped with chopped nuts and raisins.
