Mushroom Stir-fry

Mushroom Stir-fry

Ingredients

  • Potato (1)
  • Carrot (1)
  • Mushroom (500 grams)
  • Cumin seeds (1 teaspoon)
  • Diced onion (1/2 cup)
  • Minced garlic (1 tablespoon)
  • Turmeric powder (1 teaspoon)
  • Chili powder (1 teaspoon)
  • Green chilies (2–3)
  • Salt (to taste)
  • Oil (2 tablespoons)

Method

  1. First, peel and dice the potato, carrot, and mushroom into small cubes, then rinse them. Heat 2 tablespoons of oil in a pan and add whole cumin seeds. Add the diced onion. When the onion softens slightly, add the minced garlic, turmeric powder, and chili powder, followed by salt.
  2. Now add the vegetables and keep stirring. You do not need to add water to mushroom stir-fry, because mushrooms release plenty of moisture on their own. Cover the pan with a lid. Once the released water dries up and all the vegetables are tender, add 2–3 green chilies split down the middle. Cook for another 3–5 minutes.
  3. Done — a delicious and nutritious mushroom stir-fry. It tastes wonderful with hot whole-wheat roti.
