Mushroom Stir-fry

Ingredients
- Potato (1)
- Carrot (1)
- Mushroom (500 grams)
- Cumin seeds (1 teaspoon)
- Diced onion (1/2 cup)
- Minced garlic (1 tablespoon)
- Turmeric powder (1 teaspoon)
- Chili powder (1 teaspoon)
- Green chilies (2–3)
- Salt (to taste)
- Oil (2 tablespoons)
Method
- First, peel and dice the potato, carrot, and mushroom into small cubes, then rinse them. Heat 2 tablespoons of oil in a pan and add whole cumin seeds. Add the diced onion. When the onion softens slightly, add the minced garlic, turmeric powder, and chili powder, followed by salt.
- Now add the vegetables and keep stirring. You do not need to add water to mushroom stir-fry, because mushrooms release plenty of moisture on their own. Cover the pan with a lid. Once the released water dries up and all the vegetables are tender, add 2–3 green chilies split down the middle. Cook for another 3–5 minutes.
- Done — a delicious and nutritious mushroom stir-fry. It tastes wonderful with hot whole-wheat roti.
