Broken Rice / Bouya Rice
Broken rice, also known as bouya rice, is a traditional Bangladeshi dish. Here is how to make it.

Ingredients
- Broken polao or basmati rice (1 cup)
- Onion (1 large)
- Oil (1 tablespoon)
- Cardamom (2)
- Cinnamon (2 pieces)
- Cloves (2)
- Bay leaf (1)
- Salt (to taste)
- Green chilies (5–6)
Method
- Wash the broken rice very well and drain.
- Heat oil in a pan and add chopped onion and the whole spices. When the onion softens slightly, add the washed broken rice. Toast the rice over low heat. It will toast quickly. Keep hot water ready in another pot. When the rice is toasted, a wonderful aroma will rise. Add water using the rule of 3 cups water for every 1 cup of broken rice.
- When the water has absorbed, reduce the heat to very low and spread 5–6 whole green chilies over the top. Bring the top layer to the bottom and the bottom layer to the top, then leave it on very low heat for 10 minutes. This is called giving it dum. During those 10 minutes, gently turn the rice over 3–4 times, bringing the top layer down and the bottom layer up. Your broken rice or bouya rice is ready.
- Serve hot with a few vegetable bhartas and fried eggs.
