Vegetarian Taro Greens

Ingredients

  • Taro greens with stems (500 grams)
  • Onion (1)
  • Garlic (15–20 cloves)
  • Green chilies (2–3)
  • Turmeric powder (1 teaspoon)
  • Chili powder (1 teaspoon)
  • Dried chilies (2–3)
  • Salt (to taste)
  • Oil (1 tablespoon)

Method

  1. First, wash the taro greens with stems and cut them into small pieces. Put 1/4 cup of water in a pot along with garlic cloves, green chilies, taro greens, and salt to taste, and steam over the heat. The taro will soften within a few minutes and reduce considerably in volume. Mash the taro well with a spatula. Once the water dries up, transfer to a bowl and set aside.
  2. Heat oil in a pan and add diced onion and dried chilies. When the onion turns golden, add turmeric and chili powder and sauté briefly. Add the cooked taro and stir-fry over medium heat for a long time until almost no moisture remains. When the taro greens are fully stir-fried, take off the heat and serve hot with rice.
