Shahi Firni
Here is how to make traditional shahi firni with wedding-feast flavor.

Ingredients
- Fragrant rice (1 cup)
- Milk (1 liter)
- Sugar (450 g)
- Ghee (1 tablespoon)
- Raisins (1/2 cup)
- Cardamom (2–3)
- Cinnamon (2–3 sticks)
- Saffron (5 g)
- Chopped pistachios (for serving)
Method
- First, wash the fragrant rice and soak it in water for 30 minutes so it softens and swells. Then coarsely crush the rice and set it aside.
- In a bowl, stir the saffron into a little warm milk. Cover and let it sit for 30 minutes.
- In a pot, bring 1 cup of water to a boil with the crushed rice, cardamom, and cinnamon and cook until tender. When the water is nearly absorbed, add the milk, sugar, raisins, and saffron-infused milk. Cook over medium heat. Add the ghee. When the milk has thickened to a creamy firni consistency, pour it into a serving dish and let it set. Sprinkle chopped pistachios on top for serving.
- Firni is usually served cold. Let the hot firni come to room temperature first, then chill it in the fridge before serving.
