Shahi Firni

Here is how to make traditional shahi firni with wedding-feast flavor.

Shahi Firni

Ingredients

  • Fragrant rice (1 cup)
  • Milk (1 liter)
  • Sugar (450 g)
  • Ghee (1 tablespoon)
  • Raisins (1/2 cup)
  • Cardamom (2–3)
  • Cinnamon (2–3 sticks)
  • Saffron (5 g)
  • Chopped pistachios (for serving)

Method

  1. First, wash the fragrant rice and soak it in water for 30 minutes so it softens and swells. Then coarsely crush the rice and set it aside.
  2. In a bowl, stir the saffron into a little warm milk. Cover and let it sit for 30 minutes.
  3. In a pot, bring 1 cup of water to a boil with the crushed rice, cardamom, and cinnamon and cook until tender. When the water is nearly absorbed, add the milk, sugar, raisins, and saffron-infused milk. Cook over medium heat. Add the ghee. When the milk has thickened to a creamy firni consistency, pour it into a serving dish and let it set. Sprinkle chopped pistachios on top for serving.
  4. Firni is usually served cold. Let the hot firni come to room temperature first, then chill it in the fridge before serving.
