Tomato Salmon Curry

Ingredients

  • Salmon fillets (2 pieces, 250 g)
  • Tomato (3)
  • Potato (2)
  • Onion (1)
  • Turmeric powder (1/2 teaspoon)
  • Chili powder (1/2 teaspoon)
  • Green chilies (2–3)
  • Salt (to taste)
  • Cilantro (for serving)

Method

  1. First, wash the salmon fillets, rub lightly with turmeric, shallow-fry in oil, and set aside.
  2. Heat oil in a pot and add chopped onion. When the onion softens, add turmeric powder, chili powder, and salt. Add medium-sized cubed tomato and long potato slices. Stir lightly and add 1 cup water. The potato will soften quickly and the tomato will break down into a coating gravy. Add the fried fish and green chilies and cook 2–3 minutes more.
  3. Finish with cilantro and serve.
