Bibikhana Pitha
Here is how to make traditional bibikhana pitha.

Ingredients
- Rice flour (375 g / 1.5 cups)
- All-purpose flour (125 g / 0.5 cup)
- Condensed milk (250 ml)
- Date palm jaggery (1 cup)
- Eggs (2)
- Sugar (2 tablespoons)
- Grated coconut (1 cup)
- Baking powder (1/2 teaspoon)
- Salt (1/2 teaspoon)
Method
- First, mix the rice flour, all-purpose flour, sugar, salt, and baking powder together until there are no lumps. Beat the 2 eggs well in a pot. Add the condensed milk and date palm jaggery and mix; add a little water if needed. Stir in the grated coconut. Then add the dry ingredients and mix well. The batter should be about as thick as pancake batter. Cover and let it rest for 30 minutes. If you used packaged rice flour or grated coconut, mix in another half cup of milk and rest for an additional 30 minutes so the coconut and rice flour can absorb the liquid properly.
- Traditionally this pitha is baked covered in a water bath. You can also bake it in the oven without a water bath. Bake at 175°C for 35–40 minutes. Serve once baked.
