Ingredients
- Prawns (200 g)
- Polao rice (1 cup)
- Oil (1 cup)
- Radhuni biryani mix (2 tablespoons)
- Green chilies (6–7)
- Ginger paste (1 teaspoon)
- Turmeric powder (1 teaspoon)
- Chili powder (1 teaspoon)
- Garlic paste (1/2 teaspoon)
- Sour yogurt (150 g)
- Salt (to taste)
- Onion (1 cup)
- Cardamom (4)
- Cinnamon (4 pieces)
- Cloves (4)
- Bay leaves (2)
Method
- Rub the prawns lightly with salt and turmeric and fry them briefly. In a pan, heat oil and add some chopped onion. When the onion softens, add ginger-garlic paste, chili powder, and biryani masala. Cook well. After a few minutes, add sour yogurt and salt. When the masala is well fried, add the fried prawns and cook for another 2–3 minutes. Set aside.
- In another pot, heat oil with the remaining chopped onion, cardamom, cinnamon, cloves, and bay leaves. When the onion softens, add the polao rice and fry well. When the rice is toasted, add water. For 1 cup of rice, I use 3 cups of water. When the rice is nearly cooked, add the prepared prawns and their gravy. Stir well and cook until the water is fully absorbed. Add 6–7 whole green chilies, stir, and let it steam on dum for 10 minutes. During those 10 minutes, gently turn the prawn polao over 3–4 times. Your delicious prawn polao is ready.
