Jilapi

Iftar feels incomplete without jilapi. And the thought of hot jilapi from a street stall is enough to make your mouth water. Here is how to make jilapi very easily.

Jilapi

Ingredients

  • Rice flour (1 cup)
  • Gram flour (besan) (1 cup)
  • Sour yogurt (1 tablespoon)
  • Baking powder (1/2 teaspoon)
  • Sugar (3 cups)
  • Cardamom (2)
  • Cinnamon (2 sticks)
  • Bay leaf (1)
  • Oil (for frying)

Method

  1. First, make the sugar syrup. In a pot, combine 3 cups of sugar, 1 cup of water, the cardamom, cinnamon, and bay leaf and bring it to a boil. Cook until the sugar dissolves completely.
  2. Mix the rice flour, gram flour, and baking powder well. Add 1 tablespoon of sour yogurt. Slowly add water to make a batter. Make sure the batter is neither too thick nor too thin. Fill a sauce dispenser with the batter. If you do not have one at home, put all the batter into one corner of a square plastic bag and snip off a tiny bit of the corner so it works like a dispenser.
  3. Deep-fry the batter over medium heat, shaping each portion into a jilapi. When they are lightly golden, soak them in the prepared sugar syrup for 4–5 minutes. Transfer to a dish and serve hot.
