Bengali-Style Vegetable Pasta
Here is a fully Bengali-style mixed vegetable pasta recipe.

Ingredients
- Fusilli pasta (200 g)
- Broccoli (1 cup)
- Carrots (2)
- Potato (1)
- Tomato (1)
- Eggs (2)
- Onion (1)
- Zucchini (1/4 cup)
- Turmeric powder (1 teaspoon)
- Red chili powder (1 teaspoon)
- Salt (to taste)
- Olive oil (1 tablespoon)
Method
- Bring a large pot of water to a boil and add 1 teaspoon salt. Add the pasta and cook according to the package directions, usually 10–12 minutes.
- Boil all the vegetables except the tomato and zucchini. Heat 1 tablespoon olive oil in a pan and add chopped onion. When the onion softens, add turmeric powder, red chili powder, and salt. Stir, then add the boiled vegetables along with diced tomato and zucchini. Cook until the tomato breaks down — the zucchini will cook through in that time.
- Crack in 2 eggs and stir. Add the pasta and cook for about 5 minutes, stirring constantly. Serve hot.
