Fuchka

Fuchka is my favorite street food. Here is an easy recipe for making it at home.

Fuchka

Ingredients

  • Dried yellow peas (1 cup)
  • Baking soda (1/2 teaspoon)
  • Chopped onion (1)
  • Dried red chili flakes (1 teaspoon)
  • Chotpoti spice mix (1 teaspoon)
  • Salt (to taste)
  • Tamarind (250 g)
  • Chopped cucumber (for serving)
  • Chopped cilantro (for serving)
  • Chopped scallions (for serving)
  • Black salt (1 teaspoon)

Method

  1. First, prepare the fuchka shells. I used store-bought shells for this recipe — fry them in deep oil at home and they are ready. You can make your own if you prefer.

  1. Next, make ghugni. I already have a ghugni recipe on this site — you can find it here.
  2. To make the tamarind water, soak the tamarind in 1 cup water for 15 minutes. Squeeze out the pulp and discard the seeds. Add water to reach your preferred thickness. Mix in black salt, table salt, dried red chili flakes, and chotpoti spice mix.
  3. Make a small hole in each fuchka shell and fill it with ghugni. Top with a little chopped cucumber, onion, cilantro, and chotpoti spice mix. Serve with a bowl of tamarind water on the side.
