Carrot Halwa
Carrot halwa is my favorite snack. Here is how to make it.

Ingredients
- Carrots (1 kg)
- Sugar (1.5 cups)
- Ghee (2 tablespoons)
- Chopped nuts (1 cup)
- Milk (1 kg)
- Raisins (for serving)
- Pomegranate seeds (for serving)
- Cardamom (2)
- Cinnamon (2 sticks)
- Bay leaf (1)
Method
- First, peel the carrots, wash them well, and grate them very finely. Heat ghee in a pot and add the whole spices. When the ghee is hot, add the grated carrots and fry them well. The grated carrots will release water; keep frying until they are completely dry. Stir constantly so the carrots do not stick to the bottom of the pot. When the water has evaporated, add the sugar. The sugar will melt quickly. Then add the milk and keep stirring.
- When the milk is nearly reduced, add some of the chopped nuts. Cook a little longer until the milk is completely absorbed. Remove from the heat and serve topped with the remaining chopped nuts, raisins, and pomegranate seeds.
