Green Mango Jelly
Here is a recipe for delicious, healthy green mango jelly.

Ingredients
- Green mangoes (300 g)
- Sugar (2 cups)
- Lemon juice (2 teaspoons)
- Green food coloring (1 pinch)
Method
- Peel the green mangoes, remove the pits, cut into small pieces, and wash them. Boil in 500 ml water until very soft. Strain, reserving the cooking liquid separately. You can use the boiled mango pulp to make chutney if you like.
- Measure the mango cooking liquid and return it to the pot. For every cup of liquid, add 1 cup sugar — I had 2 cups of liquid, so I used 2 cups sugar. Stir continuously until the sugar dissolves completely. Add 2 teaspoons lemon juice, which acts as a preservative. Add a pinch of green food coloring if you like — it is optional. Continue cooking until the mixture thickens to a syrupy consistency, then remove from the heat.
- Pour the hot jelly into a glass container. Once cool, refrigerate. It keeps well in the fridge for about 6 months.
