Khirsa Puli

Ingredients
- Milk (2 liters)
- Sugar (1 cup)
- Fragrant rice flour (2 tablespoons)
- Rice flour (1.5 cups)
- Salt (to taste)
- Oil (for frying)
- Cardamom (3)
- Cinnamon (2 sticks)
- Bay leaf (1)
Method
- First, to make the khirsa, heat 2 liters of milk and reduce it. When the milk has reduced to about 1 liter, add the cardamom, cinnamon, bay leaf, sugar, and 2 tablespoons of fragrant rice flour. Continue cooking over medium heat, stirring constantly, until the milk thickens into khirsa.
- In a pot, combine the rice flour with 1 tablespoon of oil and enough water to make a dough. Roll the dough out thin like flatbread and cut it into small round pieces. Place khirsa in the center of each round, fold the two edges together to close it, and seal the edges by pressing with a fork.
- Finally, deep-fry until golden and serve hot.
