Punjabi Dish: Rajma

Ingredients
- Rajma/kidney beans (1 cup)
- Tomatoes (3)
- Onion (1)
- Turmeric powder (1 teaspoon)
- Chili powder (1 teaspoon)
- Coriander powder (1 teaspoon)
- Garam masala powder (1 teaspoon)
- Green chilies (2)
- Whole cumin seeds (1 teaspoon)
- Garlic (2–3 cloves)
- Cardamom (2–3)
- Cinnamon (2–3 sticks)
- Bay leaves (2)
- Cilantro (to taste)
- Salt (to taste)
- Oil (as needed)
Method
- Wash the beans well and soak in water for 6–8 hours. In a pot, add the beans with water, salt, cardamom, cinnamon, and bay leaves. Cook until completely soft.
- Heat oil in another pot and add whole cumin seeds and chopped onion. When the onion softens, add chopped garlic. Once the onion turns golden, add all the spices and chopped tomatoes and cook until the masala is well fried. Add the cooked beans with their cooking liquid. Add 2 green chilies split lengthwise. Cook for 10–15 minutes until the liquid reduces and the dal becomes thick. Garnish with chopped cilantro and serve.
