Tomato and Hyacinth Bean Seed Curry
Here is an easy recipe for a tomato curry with hyacinth bean seeds.

Ingredients
- Hyacinth bean seeds (400 g)
- Tomatoes (3)
- Green chilies (2–3)
- Onion (1)
- Ginger paste (1/2 teaspoon)
- Garlic paste (1/2 teaspoon)
- Turmeric powder (1/2 teaspoon)
- Chili powder (1/2 teaspoon)
- Salt (to taste)
Method
- First, soak the hyacinth bean seeds in water for 5–6 hours. This softens the skins. Then peel off all the skins and transfer the seeds to a bowl.
- Heat oil in a pot and add chopped onion, ginger paste, and garlic paste. When the onion turns soft and starts to brown, add salt, turmeric, and chili powder. Add a little water if needed so the spices do not burn. Once the masala is fried, add the hyacinth bean seeds and diced tomatoes. Cook for about 10 minutes. Add water, cover, and simmer until the seeds are tender. Top with a few green chili strips and cook for another 2–3 minutes before serving.
