Ingredients

  • Bread (5–6 slices)
  • Full-fat milk (1 kg)
  • Condensed milk (250 g)
  • Sugar (2 cups)
  • Raisins (1 tablespoon)
  • Chopped nuts (2 tablespoons)
  • Ghee (for frying the bread)
  • Cardamom (2)
  • Cinnamon (2 sticks)
  • Bay leaf (1)

Method

  1. First, trim the crusts from the bread slices and cut them into small triangles. Lightly fry them in ghee and set aside. Arrange them neatly in the dish you will use for the shahi tukra.
  2. In a pot, heat the milk, condensed milk, and sugar with the cardamom, cinnamon, and bay leaf, stirring constantly until the milk reduces by about half. Pour the milk over the fried bread and sprinkle chopped nuts and raisins on top. Once the milk has cooled to room temperature, refrigerate it. Shahi tukra is usually served cold. Take it out of the fridge before serving.
