Mediterranean Dish: Shakshouka

Ingredients

  • Eggs (3)
  • Olive oil (2 tablespoons)
  • Onion (1)
  • Chopped tomatoes (3)
  • Chopped red bell pepper (1/3 cup)
  • Chopped green bell pepper (1/3 cup)
  • Chopped yellow bell pepper (1/3 cup)
  • Chopped mushrooms (1/2 cup)
  • Green chilies (2–3)
  • Turmeric powder (1 teaspoon)
  • Chili powder (1 teaspoon)
  • Cumin powder (1 teaspoon)
  • Coriander powder (1/2 teaspoon)
  • Salt (to taste)
  • Black pepper powder (1/2 teaspoon)

Method

  1. Heat olive oil in a pan and add chopped onion. When the onion softens slightly, add turmeric powder, chili powder, salt, cumin powder, and coriander powder. Add chopped tomatoes, mushrooms, bell peppers, and green chilies. Cook until everything is soft and tender.
  2. Crack 3 eggs on top of the mixture. Do not stir after adding the eggs. Cover and cook over low heat until the eggs are set. Sprinkle black pepper powder over the eggs and serve hot.
