Beef Stew

This is my mother's recipe — my favorite beef dish. Served hot with paratha, it feels like heaven on a plate. Here is the recipe.

Beef Stew

Ingredients

  • Beef (1 kg)
  • Cumin powder (1 teaspoon)
  • Whole dried chilies (8–10)
  • Coriander powder (1/2 teaspoon)
  • Garam masala powder (1 teaspoon)
  • Cardamom (4)
  • Cinnamon (4 pieces)
  • Cloves (4)
  • Bay leaves (2)
  • Star anise (1, optional)
  • Salt (to taste)
  • Chopped onion (1 cup)
  • Ginger paste (1 teaspoon)
  • Garlic paste (1 teaspoon)
  • Oil (1/2 cup)
  • Roasted cumin powder (1 teaspoon)

Method

  1. Cut the beef into small pieces. Lightly pound the meat with a meat mallet. If you do not have one, you can pound it with a mortar pestle or any heavy object. Marinate the beef with all the spices except onion and roasted cumin powder for 1 hour.
  2. Heat oil in a pot. When the oil is hot, add the marinated beef mixture. Cook over medium heat. You do not need to add extra water at first; the beef will release its own juices and cook in them. If the liquid dries up before the beef is tender, add a little water.
  3. When the beef is cooked and the liquid has evaporated, sprinkle roasted cumin powder over the top and serve hot with paratha.
