Ingredients
- Milk (1 liter)
- Vinegar (4 tablespoons)
Method
- First, heat the milk in a large pot. In a separate bowl, mix 4 tablespoons of vinegar with an equal amount of water and set it aside. When the milk comes to a boil, turn off the heat. Slowly add the vinegar-and-water mixture to the milk while stirring. Once everything is combined, wait 5 minutes. During this time the milk will curdle and the chhana will separate.
- Now strain the mixture through a thin cotton cloth or cheesecloth and set the chhana aside. Rinse it lightly with a little water so there is no vinegar smell. Tie the chhana in the cloth and hang it for 1–2 hours so the excess water drains away. Your chhana is ready. You can now use it to make all kinds of sweets.
