Doi Bora

The name doi bora alone is enough to make your mouth water. Here is how to make this delicious snack easily with semolina.

Ingredients

  • Sour yogurt (750 g)
  • Semolina (1 cup)
  • Red chili powder (1 teaspoon)
  • Chaat masala (1 teaspoon)
  • Roasted cumin powder (1/2 teaspoon)
  • Green chilies (2–3)
  • Ginger paste (1/2 teaspoon)
  • Garlic paste (1/2 teaspoon)
  • Tamarind sauce (for serving)
  • Cilantro-green chili paste (for serving)
  • Salt (to taste)
  • Chopped cilantro (1 tablespoon)
  • Chopped mint (1 teaspoon)
  • Black salt (1 teaspoon)

Method

  1. First, make the dressing. In a bowl, mix 500 g sour yogurt with red chili powder, roasted cumin powder, chaat masala, and black salt. Cover and set aside.
  2. For the fritters, combine semolina, 250 g sour yogurt, and 1 cup water in a bowl. Cover and rest for 30 minutes. Then add ginger paste, garlic paste, chopped green chilies, and chopped mint. Mix well. Deep-fry spoonfuls in hot oil until lightly golden, shaped like pakoras or fritters. Let them cool completely.
  3. In another bowl, mix 1 teaspoon salt into 1/2 liter water. Soak the fried fritters in this water for 10 minutes.
  4. After 10 minutes, gently squeeze out the water and transfer the fritters to the serving bowl. Pour the yogurt dressing over the top. Finish with tamarind sauce, cilantro-green chili paste, and a sprinkle of chopped cilantro. Serve.
