Date Palm Jaggery Payesh

Ingredients
- Fragrant rice (1 cup)
- Milk (1 liter)
- Date palm jaggery (250 g)
- Raisins (for serving)
- Cardamom (2–3)
- Cinnamon (2–3 sticks)
- Cloves (2)
- Bay leaf (1)
Method
- First, wash the fragrant rice very well and drain the water. In a pot, combine the milk, cardamom, cinnamon, cloves, bay leaf, and date palm jaggery and bring it to a boil. When the jaggery melts, add the fragrant rice and stir gently over low heat. The rice will cook through within a few minutes. Then keep stirring over low heat until the milk reduces and thickens. Do not stop stirring at any point, or the payesh may stick to the bottom of the pot. Finally, pour into a serving bowl and sprinkle raisins on top.
