Loitta Dried Fish Bhuna

Ingredients
- Loitta dried fish (250 grams)
- Garlic (4–5 cloves)
- Diced onion (1 cup)
- Dried chilies (2–3)
- Turmeric powder (1 teaspoon)
- Chili powder (1 teaspoon)
- Green chilies (2–3)
- Salt (to taste)
- Oil (2 tablespoons)
Method
- First, remove the tails and scales from the dried fish and cut it into small pieces. Rinse well and soak in water for half an hour.
- Heat oil in a pan and fry the dried fish and garlic cloves. Set them aside, add a little more oil to the same pan, and add diced onion and dried chilies. When the onion softens slightly, add turmeric powder, chili powder, and salt, and sauté until the spices are fragrant. Add the fried fish and garlic back in and cook over low heat for another 10–15 minutes, stirring well. Add split green chilies 2–3 minutes before taking off the heat.
- Serve hot with rice.
