Puffed Rice Balls (Muri Moya)

Puffed Rice Balls (Muri Moya)

Ingredients

  • Puffed rice (muri) (500 g)
  • Sugar or jaggery (500 g)
  • Green cardamom (2)
  • Cinnamon (2 pieces)
  • Bay leaf (1)

Method

  1. Sift 500 g puffed rice through a strainer to remove dust, sand, and broken bits. In a large pot, make a syrup with the jaggery or sugar and a little water — I usually use 1 cup water for 500 g jaggery. Add the cardamom, cinnamon, and bay leaf for a lovely aroma.
  2. When the syrup is nearly ready, remove the whole spices and take the pot off the heat. Immediately add the puffed rice and mix well. While the mixture is still warm — before the syrup sets — shape it into balls.
  3. Store in an airtight container and enjoy for a long time.
