Potato Wedges

Ingredients
- Potatoes (4)
- All-purpose flour (1/2 cup)
- Rice flour (1/4 cup)
- Corn flour (1/4 cup)
- Salt (to taste)
- Dried chilies (2)
- Chopped cilantro (1 tablespoon)
- Turmeric powder (1 teaspoon)
- Chili powder (1 teaspoon)
- Garlic powder (1 teaspoon)
- Oil (for deep-frying)
Method
- First, wash the potatoes well and cut them into large wedges with the skin on. Make sure each wedge has three corners. Bring a large pot of water to a boil with 1 tablespoon of salt. Add the potatoes and cook until about 70–80% done. Drain and let cool.
- In a bowl, combine rice flour, corn flour, and all-purpose flour with salt to taste and mix well. Add dried chili flakes, turmeric powder, chili powder, garlic powder, and chopped cilantro and mix again. Add water to make a batter—it should be fairly thin. When you dip a potato wedge, it should get only a light coating.
- Dip the par-cooked wedges in the batter and deep-fry until golden brown. Serve hot.
